Inside: yellowish-dun ivory colour, compact paste, with no mechanical openings. Dark yellowish-dun inner rind.
Strong and evolved aromas, typical from the non-pasteurised sheep’s milk and terroir.
Hard, dry, compact and brittle texture.
Strong and well-developed flavours, long-lasting on the palate, sharp, salty, with a trace of sheep milk, boiled butter and nutty taste.
